The Perfect Beef Joint

Rib Of Beef

1 joint of aged Rib of Beef (3-4 ribs worth)

Beef dripping

Salt and ground black pepper

1 bottle of wine ( as a pat on the back to yourself for a job well done)

Massage the whole joint with the dripping, or olive oil if dripping is not available.

Season lightly all over.

Place in a roasting tin and put in a hot oven 220°C - 230°C.  Cook for about 30 minutes, until the meat looks well brown and is sizzling.

Turn the oven down to 160°C.

Allow the following times dependent on how you like your meat:

9-10 minutes per 500g for very rare meat

12-15 minutes per 500g for medium

18-20 minutes per 500g for well done

Once cooked to your liking remove from the oven and

cover with a piece of foil.. LEAVE ALONE FOR A LEAST 30 MINUTES to allow the meat to relax.  

Carve and serve with Yorkshire puddings, vegetables, mash & gravy. Perfect
